Banana Fritters with Golden Syrup

You will need

300g Plain Flour

310ml water, chilled

Golden Syrup


1. Sift the flour (separate small amount of flour for dusting) and bicarbonate of soda into a bowl.

2. Add the chilled water and mix until a smooth batter forms.

3. Rest mixture for 10 minutes.

4. Heat 3cm of vegetable oil in a deep saucepan. Heat on high to 180°C.

5. Peel bananas and cut in half lengthways.

6. Dust bananas with remaining flour, shaking off any excess.

7. Dip bananas in the batter mix and deep fry for 3­-4 minutes or until golden brown.

8. Remove from oil and drain on paper towel.

9. Serve immediately with golden syrup drizzled on top.

10. Optional cream or ice cream as extra topping.
