Generally speaking, Organic Crystalline Sugar is pale in colour. Grain size can vary from standard demerara to a fine raw caster. This sugar can also be milled to crush the grain particles to produce an organic raw caster sugar. Organic white granulated is also available and as organic volumes continue to grow, so do the choice and variants of a particular sugar.
